Enjoy Ristorante Cavour, Hotel Granduca’s first signature restaurant, under the direction of Executive Chef David Denis who is also the chef and owner of the highly-acclaimed French restaurant Le Mistral in Houston. Ristorante Cavour offers unique Northern Italian cuisine with a French accent.
The warm, intimate restaurant is the vision of Giorgio Borlenghi with design of Ermy Borlenghi Bonfield—the talent behind the design of the entire hotel. In keeping with the old-world Tuscan feel, the space is small and intimate with warm colors, flickering candlelight and antique paintings gracing the walls. The name of the restaurant was inspired by, Camillo Benso, conte di Cavour, the former Prime Minister of the Kingdom of Piedmont-Sardinia. He worked in Torino under King Victor Emanuel II and is known for unifying Italy in 1861. Count Cavour became, in that year, the first Prime Minister of Italy.
About the Chef
Denis is an award-winning chef with an extremely impressive
culinary resume, including finishing first in his class in
culinary arts at the École du Beausset in France and
training at the famed Hôtel le Carlton International in
Cannes. He then became head chef at Restaurant le Bois de
Lune-Montvenix in Savoie at the age of 20 and honed his culinary
skills for three years as a chef at Hotel le Gasthof Baren in
Switzerland. A year before opening Le Mistral, Denis was an
instructor at the Alain and Marie LeNôtre Culinary
Institute in Houston.
“Ristorante Cavour offers the best of Northern Italian cuisine with a heavy Provençal influence,” says Denis. “The intimate setting features a specially created menu which changes often, exciting the palate of the sophisticated guest with each visit to Cavour.”
Chef Denis uses fresh herbs, spices and natural, juice-flavored sauces (not heavy creams found in most French food) to flavor his cuisine. Signature dishes as the Granduca salad and a slowly braised osso buco are Ristorante Cavour favorites.
